Gourmet Restaurant This Table Floralie is like a ray of sunshine in springtime, eagerly awaited by all in this beautiful, bourgeois and somewhat sleepy spa town. It was awakened by the project of Alicia Chardon and Florian Braissand, supported by the Gault&Millau Endowment. A long-awaited union between a young cuisine and the vineyards of the Savoie hillsides. And if you get a little lost between all these menus and formulas, when a short menu would allow you to discover the chef's talent, the market menu is a good option. After pretty mackerel rillettes with cooked beets, we discover a classic beef bourguignon à la mondeuse, with confit vegetables (we'd like a more generous purée), and the shellfish, chorizo and verjuice risotto with Treviso pesto as a smart alternative. As for desserts, in a limited choice, the lemon, fromage blanc and toast verrine is pleasantly simple. The wine list needs to be thickened, but there's already a fine vision of the local.
