Chef : 1 restaurantChoosing a sign for your first restaurant is obviously never easy. Too banal, too original or based on more or less dubious syllabic constructions, there's always the fear of making a mistake .
Alicia Chardon and Florian Braissand chose to combine the beginnings of their first names to create Table Floralie, which opened in Aix les Bains in February. The two young men, who met professionally in the kitchens of L'Estrade in Aix-les-Bains, also chose this name because it rhymes with "caudalie".caudalie", a reference to the world of wine that they have chosen to highlight in the decoration of their restaurant.
Born in Aix-les-Bains in 1994, Florian Braissand is a true native of the region. experience in Paris, the United States and Aveyron, before returning to his native Savoie to take up the post of chef at L'Estrade. Alicia, a native of Toulouse with a passion for sport (she has a black belt in taekwondo), was a brilliant law student and then a management controller, before radically changing her life and returning to the bottom of the ladder in the kitchen.
The young parents chose to offer their customers a simple yet warm experience, just like at home:"We each pass through the dining room several times to serve our customers, who can see us working from our open kitchen. This was one of the assets we absolutely wanted to develop at Table Floralie. "
The first excellent feedback from customers proves that this restaurant is well born, thanks in particular to its excellent lunch menu at €30 for a complete sequence, starter, main course and dessert .
