Gault&Millau's review2026
We've rarely seen a table so close to its subject, so concentrated is it on everything that can, near or far, materialize Cannes. On the second floor of Cannes' most illustrious palace, a mahogany-wood yacht decor plunges our gaze towards the Croisette, placing us both above it and entirely within it: luxury, privilege, elegance, sunshine, cinema, dilettantism raised to the level of art. The décor proudly displays a number of rare artifacts, including a Titanic script, an original Les Enchaînés poster and a license plate from Leo Di Caprio's Lamborghini in The Wolf of Wall Street. The theme continues at the table, with the menu like a script and the plates full of references, which are not, however, a means of concealing any weakness, as the chef unrolls a real work on the product, a remarkable just-marinated yellowtail, kohlrabi and cucumber freshness, an exceptional poultry bordering on four toques, with chanterelles, glazed carrot and poultry jus, a deep and whole taste, an impeccable and intense juice, exemplary vegetables. A beautiful conclusion of Venezuelan araguani chocolate, basil and fresh yogurt. Palatial service and excellent assistance from the sommelier, keeper of a remarkable cellar of over six hundred references.
