It’s true that Martine and Bernard Leray’s family-run inn has been “new” every year for over thirty years, constantly renewing itself like the leaves of the Alsatian forests. The chef gives his all for his region, and it repays him in kind, offering him the ingredients to craft dishes rooted in the local terroir, with the utmost sincerity and the skill of a master craftsman: snail soup, beef consommé, and a tartine of snail fricassee; Eric Jacquier’s fresh catch from Lake Geneva (a rare treat for a restaurant outside Savoie) served with a bouillabaisse-style broth and Alsatian saffron; squab with fleischnacka and a foie gras cutlet; strawberries with parsley pesto, vanilla ice cream, and strawberry rice sorbet… The “Plaisir” menu at €69.50, also available in a vegetarian version.
