Located along the waterfront, Cyrille Doraphé’s La Citadelle is a regular and reliable fixture of the resort, ensuring a steady supply of seafood delights. The menu reflects genuine culinary craftsmanship, as evidenced by the crab cannelé, smoked haddock with creamy sauce, seafood sauerkraut, shredded skate, green pepper cream, and seasonal vegetables; the grilled quail fillets with a foie gras-infused meat jus; and a frozen nougat with candied fruit and red fruit coulis.
