Cyrille DORAPHÉ
Chef : 1 restaurant Cyrille Doraphé is the chef-owner of La Citadelle, an institution located on Granville harbor.My father cooked a lot," says Cyrille Doraphé. On weekends, I'd help him make apple tarts or meat in sauce. My aunt and uncle, like my godfather, each ran a bakery-pastry shop, so I often hung out there." The young man naturally turned to the CFA in Saint-Lô (Manche) and completed his apprenticeship at La Chaumière, in Quettehou.
In 1996, with his CAP and BEP diplomas in hand, Cyrille Doraphé left the sea to venture into the mountains, to Chamonix to be precise. He spent nine years there, distilling his talents at Hameau Albert 1er, La Sapinière and Relais des Gaillands, where he was appointed chef in 2003.
In 2005, Cyrille Doraphé returned to his native region and found a position as second-in-command at La Citadelle de Granville, owned by Patrick Duret, who handed over the kitchen reins to him in 2006. Anne, his wife, joins him as room manager. Particularly committed, the couple joined forces with the owner to finally buy the establishment in 2014. "We redid everything, from floor to ceiling, but without changing our approach to cooking: simple, a touch modern and tinged with Asian touches. " An entrepreneur at heart, in 2017 Cyrille Doraphé bought a second establishment on the port: L'Astérie, renamed Le Bistro'nomik, where he celebrates all the forgotten fish.
