An experience, a model table perfectly immersed in its environment. Florian Descours' Boria is just what we've been wishing for: identity, sincerity and modernity in this beautiful country house five minutes from Privas, opening onto the hills of the Vivarais region, reminiscent in philosophy and architecture of the great cousins Marcon and Bras. The first mouth-watering appetizers get the ball rolling (including charcuterie from pigs chosen by the chef and worked from head to tail), announcing an almost surprising, and very gourmet, natural starter: endives, poultry livers, giblets, trout from the Andaure fish farm, beurre blanc, not very complicated, but effective, and Angus beef from a nearby breeder, bought on the hoof, from the Escrinet side in three acts: the ribeye, matured for two months, the melting chuck, the broth on ravioli, in a very successful beef and watercress theme. Everything is in unison, from the young, attentive service, the excellent homemade bread, the visit to the cellar for cheese lovers, and the pastry chef's great size and talent, who presents a masterfully mastered dessert of local quince and saffron. The wine cellar is essentially local, from the Ardèche and Rhône regions, with many new discoveries suggested by Quentin, the very good sommelier, although prices are well below average for such high quality. The overall score is three toques, but there are a number of higher-rated restaurants where the fun is less.
