Chef's Restaurant
Denis Martin now works in a region he knows inside out, at home in the Gard. With his wife Joana, he has moved into this superb century-old residence, which instantly immerses us in the spirit of the region's buildings, and we're already savoring the place. When it comes to cuisine, the emphasis is clearly on local and seasonal ingredients. And while we would have liked a little more balance between the chickpeas and the mousseline accompanying the roast lamb filet mignon, we wholeheartedly appreciate the just-seared langoustine, creamy sorrel and granny smith apple, grilled sucrine heart and condiment reduction of the heads.. Roasted saddle of Alpilles lamb, green asparagus, pecan walnut viennoise and braised morel mushrooms, with a full-bodied goji berry jus... Strawberry and rhubarb panna cotta, rounded off with a creamy vanilla seed ice cream, rounds off this moment with mastery and delicacy. A young, refreshing yet qualified service. The wine list is resolutely oriented towards the Rhône Valley and Languedoc, with a few pretty names for wine lovers.
