Denis MARTIN
Chef : 1 restaurantDenis Martin has brilliantly taken over from Fabien Fage at The Marcel restaurant in Sète. He also manages his two other addresses, Restaurant des Halles and The Rio, belonging to the Épicure group created by Julien Bernard and Garance Schelcher. "I'm taking over from Fabien Fage, whose second-in-command I've been since Le Prieuré. It's my first position as chef, even though I've already been in charge of the restaurant's menus for two years", explains Denis Martin.
The young chef studied at the Avignon hotel school and apprenticed at the Hôtel d'Europe, also in Avignon, with Bruno d'Angélis. "He was my first master, and introduced me to the world of gastronomy and luxury", he recalls. It was in 2007, at the Prieuré-Baumanière in Villeneuve-lès-Avignon, that he first met Fabien Fage, whom he would follow for most of his career, all the way to Sète. "I was 21 when he won his first restaurant award," recalls the young man.
He then moved on to other experiences: a few seasons at L'Oustau de Baumanière, in Les Baux-de-Provence, working alongside Glenn Viel, before flying to Quebec, where he worked at La Maison Boulud. Back in France, he worked for Michel Kayser in Garons, before joining Fabien Fage in Villeneuve-lès-Avignon."In 2018, we left Avignon and both landed in Sète to take over The Marcel, it was a great adventure."Rewards soon followed, and Denis Martin took over the helm four years later, with the mission of staying the course.
