Chef's Restaurant Fabien Feldmann keeps his personality and signs his dishes. Local produce and fish are brought to the fore, whether by cooking, sauces reflecting originality, or well-crafted seasonings. His fine cuisine travels with gusto, breaking codes without deceit. The variation on veal is very well seen, with a chic bistro approach for two plates, veal head and asparagus, veal tartar and mimosa egg, and veal steak, reduced jus and white asparagus. From originality to dessert, blackcurrant and almond, blackcurrant wood ice cream, creamy almond, heather honey foam from Callune, pollen, raw milk granita, quince blossom. Professional welcome, cellar extended beyond borders.
