Chef's Restaurant In Saint-Charles, away from the hustle and bustle of the city center, the calm of an elegant, impertinent restaurant is just what you need with chef Fabien Feldman, who sticks to his guiding principle, a multitude of flavors, without ever tiring. The young wait staff are on hand to accompany and present the cephalopod appetizers (two cuttlefish preparations the other day, one marinated in citrus and pepper, the other grilled with shio koji kohlrabi and chili), the beet à la braise, breuil en raviole, walnut and juniper berry, the black hake en pêche du jour, au feu de bois, yogurt, criste-marine, limquat, seaweed (nicely cooked, pleasantly smooth marriage with yogurt), roast suckling lamb, Jerusalem artichoke, white asparagus, black miso, shallot and fresh fruity dessert, almond and blackcurrant wood, blackcurrant wood ice cream, almond cream, callune heather honey foam, pollen, milk granita. Well-constructed wine list, covering all vineyards, with a small foreign selection. One point more.
