Chef earns 17/20 in Gault&Millau Germany before joining Biarritz
Born in Germany in the mid-1970s and trained in some of the finest establishments throughout Europe, he and his wife Sarah moved to Heroldsberg, near Nuremberg, in 2004. The couple quickly made a name for themselves, earning a magnificent 17/20 rating from our colleagues across the Rhine. However, they weren't always successful, and at the end of 2009, the couple decided to move to the Basque country with their two daughters.
After a first experience at Albert, Fabian Feldmann opens l' Impertinent
Fabian Feldmann landed a job as a cook at Chez Albert, an old crampotte (typical fisherman's house) well known to the locals, before taking the plunge and opening, in 2012, this Impertinent, the name of which was inspired by his mother-in-law. There, surrounded by a solid team and his wife, he quickly won over the locals thanks to his science of the product and his cuisine that is both chiselled and embodied .
