Twelve place settings, twelve privileged guests who of course made a reservation to be admitted to Katarina and Renaud Chirouze's restaurant. Katarina, in the dining room, details the dishes with a delicate smile. Renaud, in the kitchen, executes a harmonious score. Four menus, 35€, 45€, 55€ and 65€, each first number indicating the number of dishes on offer, including amuse-bouche and mignardises. The forest comes to you with the appetizers: saffron and apple arancini - nettle and mascarpone financier - carrot and blood orange tartlet and beet mousse... For starters, peas, free-range egg, peppermint and light scramble in a dummy shell. Next, duck, rhubarb and elderflower, a foie gras full of softness, melting in the mouth, fine-tuned seasoning, foie gras toast and duck breast chips, elderflower jelly and lightly candied rhubarb, trout, sorrel and ginger - small trout steak, crisp skin, flesh just pink, beautifully cooked, served with seasonal vegetables cooked al dente - the sorrel sauce adds a little acidity to the flesh and the ginger a discreet spicy note. Good strawberry pistachio shiso dessert with homemade ice cream and strawberry champagne granita. Well-balanced and varied cellar.
