Chef's Restaurant Reasonable, wise and precise, Manuel Godet runs his business with skill and conviction, and leaves his Empreinte on the right track. Everything is running smoothly and efficiently, without overshadowing the pleasures of the table, at prices that would make you smile in a major metropolis. At €30 for lunch and €37 for dinner, we'd like to see this quality everywhere: duck cromesquis with beggar's fruit and Pyrenean honey, light potato and hazelnut purée, grilled octopus with chickpeas and lentils, Thai sauce, pesto rosso and black garlic condiment, perfectly cooked and with a mastery of seasoning, crème brûlée with ginger and Grand Marnier, lime and praline mousseline. Well-informed and eclectic cellar, fair and well-paced service.
