Kei Kobayashi feels right at home in the heart of Paris, asserting a definite personality, admiring French cuisine, slipping his culture into it always apropos, and welcoming guests into a somewhat cramped salon managed remarkably tactfully and delicately by director Louis-Marie Robert. In a transcontinental trait d'union, he signs plates with sublime products: palamos shrimp ceviche, hibiscus emulsion, champagne sorbet, all softness and finesse, where smokiness and roundness intermingle in a beautiful balance; crisp vegetable garden, smoked Scottish salmon and early summer vegetables, a veritable symphony of flavor and freshness; line-caught sea bass roasted on its scales, marinated lime, virgin sauce and red wine reduction, leaving an indelible crisp memory. To finish with a light, gourmet touch, a citrus vacherin, blood orange parfait glacé, yuzu sorbet and jasmine sauce, as beautiful as it is delicate. An extensive wine list and prices worthy of a Parisian four-toques with a Japanese chef.
