Ivan Vautier has been at the helm of Caen's gastronomy scene for a long time now - his flagship dominates the city, offering a haven of calm and pleasure away from the hustle and bustle of central Caen. Choices reflect both history and a curiosity for today's tastes, and the enlightened connoisseur will always find something to his liking in the slightly conservative cellar book. But of course, it's all about good values, isn't it? But be careful not to fall asleep contemplating your laurels. The table has everything it takes to remain a benchmark, and going there should encourage it to do so. And it's always nice to try the classics: lobster snacké minute and tomato confit with vanilla, poêlée de saint-pierre crème d'Isigny fumée oignons cuisinés petits poireaux grillés and a good rhubarb dessert, poached in hibiscus syrup, fine raspberry and vanilla mirror, rhubarb sorbet, raspberry emulsion, rhubarb water with raspberry caviar..
