Ithurria is a family story, a family of chefs. You can follow it in the "Our History" menu, which allows you to discover the best of each one for almost 60 years, and offers the most beautiful summary of this house. Martin Isabal offers us refined, gourmet cuisine from his home region. He shows us, through dishes from the past, how contemporary they are, while respecting the best of the product, such as the vintage anchovy, to which we succumb, or the egg, as aesthetic as it is gourmet, which establishes a bridge with the tradition of good taste, the langoustine stew or the pigeon, smoked garden chilli purée, brocoletti, cooking juices and offal fritters. A pleasant "Aïta dessert" ("father" in Basque), an almost "all-chocolate" gourmet delight, and a well-stocked cellar throughout the region and beyond.
