Remarkable Restaurant Here's a fine regional table with a very good chef we've been following for over twenty years: Xavier Isabal has become one of the compasses of Basque cuisine, showing new paths in this tradition that he's constantly renewing and updating. Most of his dishes are bold and tasteful: leche de tigre with baby vegetables from the garden, beet and rice chips; langoustine tail stew, cappelleti, pimenton de la Vera, smoked bacon and mushrooms, a dish balanced in taste and texture; farm-raised veal with sweet garden chilli ravioli and tolosa beans, vegetable vierge, padron and head sausage. And if the raspberry sorbet melissa hazelnut crunch dessert seemed just a hair below our expectations, the pleasure is great throughout the meal in this well-run family home, with its typical, warm great room, and well-involved team. A fairly extensive wine list, with a coherent choice from all the vineyards.
