Ineffable stands out for its intimate, authentic atmosphere, where chef Nicolas Thomas, our serial chef who we've been following since Verfeil (la Promenade, then la Flibuste, then Courban) prepares a solo menu, while Marie Salomez (ex Bras, Lallement, Putelat) ensures perfect service in the dining room. She masters plate presentation with finesse, adds finishing touches and even prepares a cheese platter before your very eyes. The dishes demonstrate a mastery of vegetables and local produce: the Sorgue trout, with smoked eggplant and a black sesame sauce, is a real thrill, while the plate of green beans, roasted chard cream and oxalis shows total respect for the ingredient, combining flavors and textures with finesse.
