Presentation

Born in Paris but raised in Toulouse, Marie Salomez recalls: "However, I wasn't interested in classical studies... I immediately turned it down to go to hotel school". Smiling and energetic, she knew right from the start that she wanted to work in the dining room, in contact with customers, presenting them with beautiful dishes and sharing the culinary experience.

Training with the greats

From her very first internships, Marie was exposed to the demands of the greatest chefs. "Incontact with Christophe Bacquié, I learned a lot, about the profession of course, but above all about myself". This was followed by experiences at Maison Bras in Aveyron, at Bristol to perfect her English, and then with Arnaud Lallement and Franck Putelat, where she stayed for two years. These years forged her rigor and sense of service, while honing her personality and ease in the dining room.

A meeting and a shared adventure

In 2020, she joined Nicolas Thomas at the restaurant La Promenade, in Verfeil. "As life would have it, we've been together ever since. After stopping off at La Flibuste and Château de Courban, the couple opened L'Ineffable in 2024. "We fell in love with the village, the location... it was the perfect opportunity".

With just 14 covers and open only for dinner, Marie Salomez manages the dining room, the cellar and even the administrative tasks. "Our days are full," she smiles. Her elegance, naturalness and passion for service make L'Ineffable an intimate place where every customer enjoys a unique experience, true to her vision of demanding, warm-hearted dining.
