Chef's Restaurant Auch's legendary hotel stands out in the heart of the city as one of the prefecture's most majestic buildings. Its beautifully sculpted stonework and pilastered entrance introduce a house that has reinvented itself, revealing a remarkable great room where contemporary elements mingle with a joyously classic style, with high ceilings, a painted dot fireplace, mirrors and chandeliers, colorful windows and Scandinavian seating. The establishment has been the kingdom of the Casassus brothers for over fifteen years, Vincent in the kitchen, Fabien in the pastry shop and Bruno in the dining room, MOF in service and table arts. It's an experience in fine gastronomy, with the finest regional produce and undeniable expertise, serving seasonal compositions of the highest standard. For just €59, the tasting menu is one of the most affordable in the region, featuring poached Marennes Oléron oysters in jelly, light vichyssoise and black pork powder, green asparagus, petit manseng vinegar butter and auscitaine sauce, carpaccio de bar aux sucs de canard et citron vert, médaillon de veau de Luz-Saint-Sauveur, jus corsé et premiers légumes de printemps, croustade revisite or millefeuille chocolat-menthe, pâte sucrée cacao, crémeux chocolat and ganache menthe.
