Chef's Restaurant The three Casassus brothers (Vincent in the kitchen, Bruno in the dining room, Fabien in the pastry shop) have taken the legendary Hôtel de France to a whole new level, doubling the offering with the addition of a "Gascon bistro", Le 9. At the gastro, in the "Grande Salle", even if you can't avoid a few modernist tics, you'll really enjoy the generous flavors of foie gras mi-cuit en gelée au pousse-rapière, duck and foie gras tourte, ris de veau meunière jus aux pickles de noix and the timeless, must-try desserts, armagnac soufflé with prunes or Norwegian omelette flambéed in armagnac. A good lunch menu at €35, featuring regional products including Saint-Mont, Gascogne and Madiran wines and organic beer from the Gers...
