Chef's Restaurant Although we can't speak of an authentically Provençal auberge - the Alain Ducasse standard sets the bar high enough to depart from it - this beautifully appointed former abbey is an invitation to cosy evenings and intimate meals, including on the terrace. The local boy, who trained here twenty years ago, knows his country and its resources. His menu is simple enough, and royally expensive, but it's easy to give up a €100 bill for these two regular toques, given the good time had by all: with the anchovy tatin with lemon confit and sweet onion, the sautéed lean with bourride sauce or the snacked red mullet with liver sauce, the Melba-style strawberries and the essential chocolate tart, reminiscent of the excellence of Alain Ducasse's group in this field. The regional wine cellar is well looked after by a dedicated sommelier, although the prices can also be refreshing.
