Chef's Restaurant The Brignoles region is the active and popular Var, far from the beaches and yachts. In this environment, the historic oasis of Abbaye de la Celle attracts an epicurean and affluent clientele, seduced by the charm of the ancient stone and the Ducasse brand attached to the house. On a daily basis, the chef takes a cautious approach to his menu, using recipes that are well executed, technically crafted and based on the simplicity of the season. The mussel soup (just a velouté on winter vegetables) doesn't leave a lasting impression, but the poultry albufera jus reduced to poultry blood sausage shows a mastery of two toques before the savarin with its three-vanilla cream and ice cream in a good classic exercise. The bill, around €100, seems a little excessive, but alternatives are rare and the entre-soi is undoubtedly an asset. Young, well-supervised wait staff, who work their magic with kindness, a regional wine cellar and a small selection of local wines by the glass.
