Chef's Restaurant The address (ex-L'Oseille) has always been a promising one. The reputation is maintained and should even grow with this new Empreinte from the Laurent brothers, Florian in the dining room who worked with Jacky Ribault and Jérôme, the chef, who worked with Yannick Alléno. The mid-range Saveur menu, at €59, is a good way to get acquainted. Convincing appetizers include a revisited mackerel in white wine, under a veil of white wine jelly, puffed rice chips, Isigny cream and oxalis, beautiful scallops from the Bay of Morlaix on a Jerusalem artichoke mousseline, roasted hazelnuts and meat jus, an impeccably cooked quasi de veau de l'Aveyron, white asparagus, morels in a creamy sauce, simple, but so good ; before a personalized Belle Hélène pear, delicate and gourmet. This lovely cuisine respects the seasons and is well traced, sourced from referenced breeders and market gardeners. The wine list features a fine selection of wines, with Florian's commentary.
