A rewarding career in Paris
As luck would have it, at the age of 19, Jérôme Laurent crossed paths with Yannick Alléno and joined Le Meurice. The chef then took him on the adventure of Les Terroirs Parisiens, where he opened as chef de partie at the Bourse and the Mutualité. This was followed by Stay at the Sofitel Faubourg, then Pavyllon at Ledoyen. All in all, eight years at Yannick Alléno's side, enough to build up a CV and a wealth of experience .
A cuisine committed to local ingredients
"I was already keen to have my own place." So Jérôme Laurent joined forces with one of his friends from "Top Chef", Paul-Arthur Berlan, with whom he set up L'Escudella, his first opening as associate chef. The adventure lasted seven years, before each went his own way. "I wanted to open something with my brother Florian, who had worked in the dining room with Jacky Ribault, then at Les Climats with Julien Boscus.We found this place, which was called l'Oseille, and opened Empreinte at the end of 2023.
