In the heart of the resort, a conscientious chef steers his ship with gusto and regularity. Jonathan Datin learned the trade alongside Franck Quinton in Bagnoles, so he's well steeped in Norman culture and passion for the product. In Granville, diners are well served in this respect, with finesse and savoir-faire combining on the plate: duck pâté en croûte, skate wing ravioli, monkfish tournedos with seaweed, celery and watercress mousseline, strawberry-rhubarb financier with fromage blanc mousse, in a menu-card that's always attractive at €60 for the full sequence.
