Head waiter : 1 restaurantAlexy Paloc's father served in the French Navy, and his professional career was subject to numerous transfers. " With my father's job, we were used to moving frequently," says this young man born in Saint-Nazaire in 1996. "I didn't grow up in a family of restaurateurs, but I've always loved good food and was quickly drawn to the restaurant business. Once I got to seconde générale, I really realized that long studies weren't for me. "It was too late for the lycée hôtelier en cuisine, due to a lack of places, but he was offered a place at the lycée hôtelier Olivier-Guichard, in Guérande, to take a bac pro CSR (marketing and services in the restaurant trade).
Now 27, this young father of two boys had never worked in a "gastronomic" restaurant before joining L'Édulis. " It was a bit of a coincidence," laughs Alexy Paloc. "My parents live near Granville, where my father is now a semaphorist. My wife and I wanted to be closer to them. I applied for a job with Jonathan Datin, the owner of L'Édulis, and the feeling was there. I also worked for a wine merchant for a few months, so that's another string to my bow. I think that, with Jonathan's partner Marjorie, we form an efficient duo in the dining room."
The young Paloc couple enjoy their life by the sea, even if they don't look beyond the next three or four years: "I'm a bit restless. It's probably because of my father," says the winner of the Jeune Talent en Salle Normandie 2023 trophy. " But, for the moment, we're really enjoying this region, which we're still learning to discover, particularly by visiting the best restaurants in the area. An excellent habit!
