After ten years at Chassagne, Émilie and Edouard have reinvented themselves, adapted to the times, and diversified, with two new restaurants, La Cabane nearby, and Prosper, based around Prosper Maufoux wines at Château de Saint-Aubin. As for the parent company, it's doing very well, thanks to the combined talents of the chef and pastry chef trained at Lameloise, among others. An attractive menu, available in three formulas from €72 to €163 depending on the number of courses, allows you to get to know everything: Vosges quail with morel broccoli, arctic char with artichoke cazette, wild garlic lamb with chard before banana passion cardamom pavlova and chocolate streusel hazelnut form a harmonious sequence in the sober, tasteful decor of this fine Burgundy house in the heart of the wine village. The cellar, of course, is in phase, with a wealth of meursault, puligny and chassagne wines.
