Chef : 1 restaurant In the heart of Burgundy's vineyards, Édouard Mignot and his wife Émilie Rey pass on their passion at their Ed.Em double-rated restaurant.After a CAP and BEP at the CFA Médéric, Édouard Mignot obtained his first position at the Hôtel Vendôme through the Compagnons. " Two years later, he continued his training in the kitchens of the French Ministry of Foreign Affairs, before joining the Café de la Paix.
After completing a Tour de France on foot in twenty-one days, he went to work with Philippe Rochat at the Hôtel de Ville in Crissier (Switzerland )"to rub shoulders with haute gastronomie". Two years later, the young chef joined Régis Marcon in Saint-Bonnet-le-Froid (Haute-Loire). He started out as demi-chef de partie, and progressed to second-in-command. "I learned humanity in the kitchen, respect, kindness, and the emotion you can bring to people." Last stop at Maison Lameloise, as second to Éric Pras . "It waswith him that I learned the most, to go beyond my limits and dare to mix and season. "
After ten years as employees, Édouard Mignot and his pastry chef wife, Émilie Rey, felt the urge to set up their own business. They did so in 2013 with the inauguration of Ed.Em, in Chassagne-Montrachet (Côte-d'Or). "At thebeginning, it was hard, we had mastered our trade as cooks and pastry chefs to our fingertips, but it wasn't easy to become a manager."The challenge was met with flying colors, as evidenced by the 2 fine toques awarded by Gault&Millau, the title of Grand de Demain Bourgogne 2015 and the launch of La Cabane, open in fine weather just a few steps from Ed.Em. The chef has also taken over the reins at Prosper, the table at Château Saint-Aubin. Their next project? The opening of a boulangerie-pâtisserie-chocolaterie.
