In the village's former cooperative cellar, this luxury establishment was built around a renowned wine estate. The eco-responsible pool and garden dominate this Fenouillèdes valley. Dennys Teixeira was entrusted with the catering side of the business, assisting previous chefs who had left for other Catalan climes. The contemporary cuisine reflects the image of the place, rooted in a terroir rich in nature-friendly producers. All products are identified and cooked to their best advantage, such as carrots with tops and radishes and a Byrrh reduction; perfectly cooked Catalan poultry is accompanied by a poularde sauce with the estate's bubbly wine; the pastry chef's dessert is beautifully constructed around strawberries in several textures under a hint of lemon jelly and a herb with an aniseed flavor. A special mention goes to the young sommelier, who has put together a top-notch wine list of the region, including the Cuvée Laïs from Olivier Pithon and Collioures from Domaine Parcé. A place and a table that have earned two toques for an ensemble in the making.
