In this monochrome room of blond and wood, an almost bland quality contrasts with chef Oscar Garcia's colorful plates, proving the talents of Franck Putelat's former second in command. The man who won three toques at the Table d'Uzès has moved up a gear here, with a €110 menu that's faultless and a well-thought-out overall experience. We discover white and green asparagus with pike egg, pike-perch with peas, wild garlic and immortelle, the beautiful pigeon with artichoke, walnut and oregano, the dessert of strawberry, rhubarb, balsamic and melilot or the association of blackcurrant, lemon balm and pepper. A beautiful moment, right down to the glass.
