The sweetness of life in the Normandy countryside, the elegance of the setting, the refinement of the service and the entire experience revolve around a cuisine based on local produce, where plants gracefully surround the region's finest wild and farmed products: scallops in sorrel and walnut gravlax, creamy red cabbage, snails in ravioli, snacked foie gras, beef broth, steamed monkfish, caramelized endives, olive crumble, riesling sauce, veal shank in citrus cider, scorsonera and pear with garden honey, creamy polenta with hazelnut mushrooms...
