Gault&Millau's review 2026

It is one of the most beautiful estates in the Jura, located a few kilometers from Dole and embodying a certain standard of excellence. Guests come here as much for the charms of the 4-star hotel, a grand 18th-century manor house where good taste is evident in every detail, as for the dishes created by Romuald Fassenet, whose impressive career spans from his early experiences at La Tour d’Argent to winning the Gault&Millau Gold Trophy in 2020. The former chef at Jean-Paul Jeunet’s restaurant and 2004 MOF continues to bring to life here a great regional cuisine—inventive and exemplary—featuring dishes such as peas with lemon balm and vin jaune, Kristal caviar and pod milk; melt-in-your-mouth Alis char cooked in Savagnin butter, young turnips, pistachio condiment, and fir-verbena sauce; Bresse chicken, the breast cooked in a bladder, served with spiced walnut jus, roasted vegetables, a confit thigh with morels and a creamy sauce, and poached rhubarb on an almond and olive biscuit, topped with frosted fresh goat cheese and crispy nettles.
