Romuald Fassenet studied at the Lycée Hôtelier de Poligny, worked with Manuel Martinez at Tour d'Argent, then with Alain Solivérès at Élysées du Vernet, before becoming second-in-command to the great Jean-Paul Jeunet at Arbois. He has never lost the competitive spirit and passion for his craft that earned him the title of MOF in 2004. Together with his wife Catherine, they bought this elegant château in 2007, gradually and patiently building it into one of Franche-Comté's finest addresses. On the borders of the Jura, Saône and Doubs rivers, the cuisine of our Gault&Millau d'Or 2020 is both reassuring and contemporary, extremely precise and refined, as exemplified by the very fine langoustines marinated in citrus fruits and ginger consommé, or the unmissable roast pigeon, one of the chef's specialties, with sweetcorn purée and griselle shallot jus. The service is impeccable, under the direction of Catherine Fassenet, who is giving her team more and more freedom to concentrate on her sommelier work.
