Romuald FASSENET
Chef : 1 restaurant"LaTour d'Argent was my first dream. I imagined the restaurant perched at the top of a silver tower."To make his dream come true, Romuald Fassenet entered the Lycée Hôtelier in Poligny, Jura. Chef Jean-Charles Douard, who now lives in Neulise, took him under his wing at the age of 15 and instilled in him a passion for gastronomy.
Competitive by nature, Romuald Fassenet wants to achieve excellence in his field. He got off to a good start, completing his military service at Matignon at the same time as chef Christopher Muller. Motivated, he continued his ascent at the Tour d'Argent, alongside Manuel Martinez: "When I saw that he had a blue-white-red collar, I said to myself that I needed the same."Under chef Alain Solivérès, he joined the team at Les Élysées du Vernet, before moving to the United States. In New York, he worked in a French bouchon that reminded him of his teenage dreams of"becoming Meilleur ouvrier de France and having my own restaurant ". He returned to France and settled in Annecy, before taking a position as second-in-command at Jean-Paul Jeunet's restaurant in Arbois.
In 2002, the couple he forms with Catherine moved closer to home, acquiring Le Bec Fin in Dole. In 2004, Romuald Fassenet won the MOF competition. Mission accomplished! But not quite... In 2007, they bought Château du Mont-Joly, in Sampans (Jura):"We've been busy. Initially, it was a dwelling house, but we fitted out seven bedrooms upstairs and built the restaurant, which is attached to the building."
Today, Romuald Fassenet defines himself as an ambassador:"I value the products of my region, but I combine them with elements of my culture, imbued with my travels in Asia and the United States."But beware! Wherever he goes, as a member of the Bocuse d'Or, he proudly defends the gastronomy of Burgundy-Franche-Comté.
