Chef's Restaurant A short summer period, but a moment of grace not to be missed if you're in the area. Château de Salettes is a splendid medieval building with timeless architecture, set amidst vineyards and offering its walls to a discreetly luxurious 4* hotel, and its gastronomic table where the chef displays true talent. These are local dishes with impeccable technique, for an even closer experience of this corner of France. On the €58 menu, artichoke, burrata and local ham, fish from the fish market and basil potatoes, slow-cooked duckling, tart prunes and lemon dauphine potatoes, red fruit crumble, light vanilla cream and strawberry sorbet. Professional service.
