In the midst of the Gaillac vineyards, Château de Salettes opens its doors from early May to October, in a beautiful medieval building with timeless architecture. Weather permitting, the aperitif can take place directly at the foot of the château's vines for an exceptional moment. The meal continues on the terrace with traditional, seasonal French cuisine, as witnessed by the white asparagus, herb sabayon and peppered pig fat, followed by pieces of lamb, chickpea mousseline, young vegetables of the moment and jus. The meal concludes on a more acidic note with candied rhubarb, soft almond cookie, elderflower sorbet and vanilla. The whole is well executed, without too many surprises, the cellar leaning towards Gaillac wines, at the right price. Smiling, efficient service.
