A new setting for the Table du Castel, and a new name for this fully-fledged restaurant, which is now one of the resort's "must-try" establishments. Chef Jérémy Coirier has taken on the mantle with increasing ease, and his sequences are well executed and coherent, as demonstrated in particular by this fine €89 menu, admittedly without choice, except for the dessert, but well adjusted: scallops potimarron barbes infused with Noilly Prat, spider crab caméline croustillante aïoli au safran de Guérande écume de carapaces, monkfish impregnated with kombu roasted cauliflower and Buddha's hand. A light finish with Corsican clementine or chocolate and candied pear parfait glacé. A 7-course tasting menu at €150, precise service with just the right amount of solemnity, a vast classic cellar with a very good selection by the glass.
