The most refined hotel complex on this part of the island also offers the finest dining. With its Italian brigade led by Fabio Bragagnolo and pastry chef Claudio Pezzetti, it's a very pleasant moment for the residents, who make up the vast majority of guests in this isolated vessel on the Portovecchian coast. At room and suite rates, the bill seems relatively fair for langoustines in carapace jelly, duet of razor clams and gamberi rossi, red mullet sabayon with fennel or roast cochon nustrale with rosemary and roasted Cervione hazelnuts from a fine large menu at €220, alongside a short but interesting menu (risotto with sea cicada, bass with caviar...). Precise, discreet service in a generally calm, well-mannered atmosphere, with a well-stocked Corsican and Italian cellar.
