Remarkable Restaurant The most beautiful, or one of the most beautiful, hotels on the island. Anchored overlooking the Gulf of Porto-Vecchio, this sleekly designed hotel is a top-of-the-range stopover for guests from all over the world. Chef Fabio Bragagnolo's menu is largely inspired by Italian cuisine. However, you can find, touch by touch, well-selected Corsican products, through a beautiful menu, or through the discovery menu offered at €220. The lobster, fresh with Catalan sauce (a little too neutral), the langoustine with nasturtium flower and bitter almond emulsion is a much more subtle creation. Immediately afterwards, you'll forget the corzettis (Genoese pasta) to concentrate on this magnificent cabri from Paul-Marie Nicolosi's sheepfold, carved in front of you with a spoon, offering meltingly delicious meat, magnified by juniper juice and lemon. Claudio Pezzetti's desserts are of good quality: a very classic and tasty Grand Marnier soufflé, a pretty granny-smith apple with tarragon or an interesting creation based on lemon, Corsican honey with a foam of ewe's milk. The wine list isn't cheap, but there are some good Corsican wines for under €100 (some Abbatucci vintages, for example).
