Fatou NGOM
Head waiter : 1 restaurant"I had a friend whose father was the manager of a large 5-star hotel. I thought their house was so pretty that one day I said to her 'I want to do the same job!"That's how Fatou Ngom became interested in the hotel and restaurant business, and enrolled in the BEP program at the Institut de Formation Hôtelière et Touristique in Senegal. She completed her internship and apprenticeship at La Riviera, in the seaside resort of Saly. She was then hired as a head waitress.
In 2010, some Corsican restaurateurs came to the restaurant and asked her to spend a season with them. As soon as she had her visa, she headed for Vivario, to work for chef Marc Marietti. The following year, she spent a summer season at the Clos de Paulilles estate in Port-Vendres. This experience opened new doors for her:"The director of Villa Duflot saw me setting the mood at Les Clos de Paulilles and offered me a year-long contract," she recounts. So it was off to Perpignan for eleven years, where she progressed from head waiter to assistant head waiter. Her enthusiasm and professionalism caught the eye of Gault&Millau, who awarded her the Jeune Talent Service en Salle Occitanie 2022 trophy.
Since November 2022, Fatou Ngom has been working at Brasserie Georges in Lyon. Although she has no immediate plans to leave this establishment, she would like to set up a restaurant in Mbour, Senegal, to create jobs and take advantage of the appeal of this major tourist city.
