Chef : 1 restaurantJean-Michel Carrette was barely a year old when his parents bought their own restaurant, Aux Terrasses, in Tournus, Saône-et-Loire. Today, he is the chef-owner.
But his passion for cooking wasn't immediate. As a child, Jean-Michel Carrette discovered cooking as a hostile environment,"my grandparents were farmers, they rented a farm. My parents started from nothing, but through hard work they succeeded. Jean-Michel Carrette took up cooking more out of mimicry than passion. Trained at the Poligny hotel school in the Jura region, he began his career in 1996 at the Tour Rose in Lyon. With a thirst for adventure, he moved to Geneva, in a palace located a stone's throw from the UN, then to London, where he opened his eyes to the cuisines of the world.
In 2004, he returned home to Roanne to work for Michel Troisgros, but in January 2005, the renowned chef informed him of the sudden death of his father following a heart attack.I wanted to open a small business in Lyon". Finally, after 18 years and a lot of hard work, Jean-Michel Carrette doubled the size of his restaurant.
At first, the young chef simply took over the reins of his father's classic cuisine, with an exotic twist. Over time, he added his own special touch: "When my colleagues see a photograph of one of my dishes, they tell me that they can easily identify the products that go into it ". At Gault&Millau, his restaurant's rating has risen from 13.5/20 to 16/20, thanks in part to the support of his wife Amandine.
