Chef : 1 restaurantAs a child, Sylvain Guillemot's first contact with the world of catering was with his mother, who had opened a bistro on the outskirts of Rennes. He soon took an interest in her work, helping her, gaining confidence and becoming convinced that he was going to be a chef.
He began his apprenticeship with Marc Tizon at the Palais restaurant in Rennes, before moving on to Pen'Roc in Chateaubourg. Chateaubourg, then Jacques Thorel, in La Roche-Bernard (L'Auberge Bretonne), who has seen so many of Brittany's great chefs pass through his doors, and with whom, for two years, he made great strides.
He then moved to Paris and the rue de Varenne, where he spent three unforgettable years with Alain Passard. It was during his time at Arpège that he met his future wife, Marie-Pierre. In 1995, when Sylvain Guillemot was just 24, he and his wife opened the Auberge du Pont d'Acigné in Noyal-sur-Vilaine. What began as a bar-restaurant-service station soon became one of Brittany's leading restaurants, eventually earning 17/20, 4 toques and a Gault&Millau d'Or award.
A just reward for this cook who respects the produce, who passionately travels the markets and who didn't wait for the latest fashion to become an adept of short circuits.
