Chef de service : 1 restaurant For over thirty years, Aurore Aurelle has managed the dining room at the Auberge de Saugras, a traditional 2-Toque restaurant north of Montpellier.Born in Nîmes in 1970, Aurore Aurelle's career path is one of the clearest in the world. After spending a season with one of her aunts in Arles, and despite studying law in Montpellier, the young woman applied for a seasonal job at the Auberge de Saugras a few months after it opened in 1990. Jérôme Aurelle, who was to become her husband, had just taken over this magnificent 12th-century farmhouse in the heart of the countryside and transformed it into a hotel-restaurant. Aurore and Jérôme fell in love, and she has since worked in the dining room, as a full member of the team: "We're all multi-skilled," she confides.
