What lasts is what doesn't change, or doesn't change too much. The Arcé family knows this only too well, having run this blessed inn in an enchanting setting for many years. While retaining the fundamentals - regional spirit, the values of terroir and sharing - the house has evolved slowly, in comfort and standing, to constitute today a privileged stopover on a well-organized Basque tour. Trout from the Banka farm is not far away, as is the Aldudes ham so dear to Pierre Oteiza, and Pascal Arcé's generous cuisine never fails to bring them to the fore, with a menu focused on the essential, the taste of true, local produce: with pig's trotter with foie gras, trout carpaccio and gravlax, duck leg confit ravioli, crispy shoulder of suckling lamb, carrots with cumin, garlic and chorizo... We save a little room for the excellent Basque cake, and then treat ourselves to a stroll in these dreamy surroundings.
