What lasts is what doesn’t change—or at least not too much. The Arcé family knows this all too well, having lovingly tended this charming inn in an enchanting setting for years. While preserving the fundamentals—regional spirit, local values, and a sense of sharing—the inn has evolved gently, offering greater comfort and luxury, to become today a must-visit stop on a well-planned Basque getaway. Trout from the Banka farm is nearby, as is the Aldudes ham so dear to Pierre Oteiza, and Pascal Arcé, in his generous cuisine, along with his son Louis, never fail to highlight them, with a menu focused on the essentials: the taste of authentic, local produce: featuring pig’s trotter with foie gras, trout carpaccio and gravlax, ravioli stuffed with confit duck legs, crispy milk-fed lamb shoulder, cumin-scented carrots, unpeeled garlic, and chorizo… Save a little room for the excellent Basque cake, and then treat yourself to a short stroll through this idyllic setting.
