Chef Emmanuel Andrieu has mastered his craft, and you'll be delighted by melon and cured ham, green asparagus, oyster foam and buckwheat, tempura prawns with sweet and sour sauce, roast salmon, asparagus and kale, cider butter, sole meunière, lamb fillet rubbed with thyme, glazed turnips and dandelion, Tonka bean crème brûlée.
