This table full of Sense deserves a trip out of the city center. Alexandre Bru is a chef with an obvious sensibility, who offers his visitors a creativity that deserves to be awakened and attentive, asserting itself a little more each year. With its easy-to-read plates, sourced products and charming welcome, it's a delightful time to savor sauté-roasted fresh Landes foie gras, fricassee of Médoc chanterelles in yellow wine, hazelnut praline, summer truffle and mushroom consommé, a fine local dish, modern and well executed, Mediterranean gurnard, bell pepper textures, fermented chili paste and black lemon-scented bouillabaisse, or Madame Le Guen's excellent pigeon in two courses, variations on chickpea, pine nuts, tangy apricot condiment and pigeon jus with zaatar. A fine chef's dessert with raspberries, and an eclectic wine list from every region.
