Gault&Millau's review 2026

William Frachot is not a man to be trifled with in this elegant, hushed downtown institution. He puts the spotlight on the products of his region, preparing them in the most concise way possible, with no fancy tricks or drum rolls. No long menu either. Just under 10 dishes in 3 menus. This at least avoids procrastination when ordering. So, let's start with these superb crayfish on a royal of trout, sapid and perfectly textured. The head broth is delightfully smooth and deep. Next, the delicate flesh of Crisenon's farmed trout is fully preserved by a double preparation. Marinated, it is accompanied by a very fine ribbon of kohlrabi with hints of rose geranium: the same ribbon of kohlrabi also used in an emulsion to coat a fillet cooked with the precision of a goldsmith. Then comes a magnificent Bresse poultry, first served "au plus simple" to appreciate all the quintessence of the supreme, just highlighted by a beautiful jus. As for the leg, roasted and crispy, it's adorned with a braised salad. Once again, William Frachot's aim is to bring out the very best in a product. The same goes for strawberries and rhubarb in an ultra-light, springtime version of vacherin. As it should be, the wine list (as Burgundian as it gets) matches the ambitions of the house. Service is remarkably efficient and friendly.
