Chef's Restaurant Having toured the world (Daniel Boulud, Marrakech, Cannes, Thailand...), Jean-Baptiste Natali returned to Colombey in 2002, where he has become the second local attraction. His mountain is a magnificent 4* hostellerie and a first-rate Champagne table, calling for great French traditions and fine produce. The €97 menu offers a nice overview, a roasted Andean horned tomato then marinated in ponzu, sea bream petals, Sturia caviar and marjoram oil, a two-cooked wild monkfish, steamed pointed cabbage, crisp salad with salicornia, lemon confit and shellfish emulsion, a heart of crispy sweetbreads, celery leaf on celery leaf confit with tarragon butter, veal jus with sheep's trotters and Colonnata bacon, a corn mousse roll, mirabelle plum texture, sorbet and brandy sabayon. To extend the meal, we offer an eight-course menu at €145.
