Gourmet Restaurant He manages his small business with intelligence and a good vision of today's restaurant business. Paul Arthur Berlan, who left the Paris region for Normandy "out of love", adapts as much to the privileged position of his bistro, right next to the Vieux Marché in the city's most touristic corner, as to today's demand for clear, well-crafted cuisine, with familiar or more original dishes and a fair-priced menu that allows diners to enjoy the premises and a young, very willing and committed service team. The foie gras coffee and cocoa marble has the right texture and melt-in-the-mouth texture, and the Normandy bouillabaisse, generous enough with local peaches and saffron aïoli from the Pays de Caux, is no slouch compared to the fine dishes on offer, priced at around €40 and approaching the price of the whole menu (a good saint-pierre the other day). The desserts are fairly conventional, but correct, and the wine cellar is quite interesting for Rouen, with good references and fair prices.
