Chef de service : 1 restaurant Smiling and efficient, Chloé Pannevel lights up the restaurant of Paul-Arthur Berlan, the former Top-Chef, in Rouen.Once she'd passed her baccalauréat S - "without really knowing what I was going to do with it", she admits - Chloé Pannevel joined the team at the All Sports Café, one of the trendiest addresses on Rouen's quayside, no doubt influenced by parents who were both waiters in their youth. No hotel school qualifications are required (which is fortunate), but above all stamina, dynamism and initiative.
I stayed for a year, but I wanted to see something else," she says. I heard that a former Top Chef, Paul-Arthur Berlan, was leaving Paris to open a restaurant in Rouen, and I was tempted. The restaurant opened its doors in January 2023 at Place de la Pucelle, and I joined the team a month later, along with my companion, also a waiter."

" A regular runner (she has won the last two editions of the Rouen café boys' and waitresses' race), the young woman sees herself staying with Paul-Arthur Berlan for a few more years. "My partner and I are thinking of opening our own restaurant one day. In any case, Chloé Pannevel has all the qualities required, as evidenced by her winning the Jeune Talent Service en Salle Normandie 2024 trophy.
