Remarkable Restaurant After a first restaurant in Lyon, rue du Palais Grillet, then the Hôtel du Golf in Corrençon, Guillaume Monjuré and Chrystel seem to have found the perfect environment. Méaudre is Chrystel's birthplace, and this small farmhouse restored around the wood-fired oven has the authenticity we're looking for. The number of tables is deliberately kept small, so that cooking and service are handled entirely by the couple. As a result, you're welcomed like a family, with great simplicity, and everything happens before your very eyes, as Guillaume cooks everything either in the wood-fired oven or on a bed of embers, and sets the plates in the small space dedicated to cooking. Tasks are divided up, so that when it's time to serve, there's plenty of time to chat with the chef. The couple's passion is the same, with a desire to work with top-quality local produce and to offer dishes that are predominantly plant-based, revealing work on textures, colors and flavors, not forgetting the herbs on the platter. The palette of ingredients is simple, but the oven-roasted tomato with crumble and mustard sorbet, for example, is an original composition with different temperatures, flavors and textures. A great success, the cristivomer that the chef had already popularized at Corrençon, is matured for ten days to enhance its flavor, accompanied by snake zucchini, cyclanthères and tarragon-creamed fumet. A like-minded winery that favors eco-responsible viticulture.
