Gourmet Restaurant Long live inns... and innkeepers! Because it's not enough to repaint the front of a barn to claim the title. The innkeeper, the one who welcomes you and treats you with sincerity and probity, is not something you can find under the foot of a horse, and it's not something you can improvise. In a tiny village in the Comminges region, at the foot of the Pyrenees and on the edge of the département, Florence and Jean-Baptiste Mazaud have created a place of attraction and entertainment, fitted out a cellar on the first floor with numerous mouth-watering references throughout the South, and brought together a whole range of local produce for a neorustic cuisine, in tune with the times and the environment, distinguished as much as it is natural. A well-crafted pâté-croûte, local trout with Plougastel oysters and pine bud cream, grilled octopus with early asparagus or an excellent pansette of lamb in a jus confit: this cuisine, "slashed" in name for the sake of modernity, but virtuous and with good traditional roots, does honor to the genre and, far beyond, contributes to the revitalization of inns. Everything is homemade, right down to the chocolate raspberry shortbread.
