Chef's Restaurant The atmosphere of a pure Basque inn in the middle of the village, the gourmet cassolettes and the kindness of the team for unchanged pleasure. In this unique atmosphere, chef Michel Niquet offers dishes that are emblematic of the Basque country, generous, well-crafted and without cheating, but also, according to his own taste, more contemporary dishes, around raw fish for example. After grilled artichokes, shavings of raw ham, truffle shavings and raw egg yolk, the menu is full of Basque flavors, with babarounak of black beans from Tolosa, Ibaïama pork belly, xistorra, black pudding and chorizo... A wide range of wines, regional and national, Spanish and French, enhanced by Madeira and Port wines.
