Remarkable Restaurant This Rue Rennequin institution, launched by Michel Rostang in 1978 with the blessing of Gault&Millau, who energetically supported the chef, is today the flagship of Stéphane Manigold's tables. Everything is done to keep the flame alive, in this beautiful wood-panelled setting with its refined decor, creating an atmosphere of complicity and chic for the many loyal diners. Beautiful dishes follow one another on rich, well-constructed menus: asparagus from Provence in its own juice, then roasted with green shiso and a curry vinaigrette of raw asparagus and caviar; steamed morels in cockles and shellfish cream; poached pike quenelle, then oven-blown with lobster cream; crispy sweetbreads with artichoke and yellow wine jus; mango with Kampot pepper, vanilla-coconut cream and tangy coriander juice in a beautiful seasonal menu. Great classic cellar, service worthy of the occasion.
