Like a beach hut nestled in the heart of Granville, just a stone’s throw from Plat-Gousset Beach, Stéphane Haissant’s restaurant uniquely weaves together its details, reflecting a rich and varied culinary journey. Having honed his craft at restaurants such as Guérard and La Tour d’Argent, before venturing to Asia and Brittany, the chef has brought the flavors of his journey back here to Normandy, creating fusion dishes where the Normandy coast blends with the aromas of the East. The menu features beautifully executed dishes such as zucchini and shellfish tartare with smoked ricotta, brown mushrooms, lemon, and rosemary; the exquisite free-range chicken with anchovies—cooked to perfection—served with soubise, capers, eggplant, and avocado; and a creamy white chocolate dessert with Williamine, cocoa sorbet, toasted bread shortbread, and popcorn. Very pleasant service.
